Steps

  • Mix chicken with ginger, garlic, chilli, salt, pepper, coriander, lime juice, and 15ml of oil.
  • Marinate the chicken for at least 5 minutes.
  • Brown the chicken in a hot shallow pan for 10 minutes.
  • Cook onion and red chilli in remaining oil for 6 minutes until golden.
  • Stir in turmeric and cook for 1 minute.
  • Add cream and simmer gently for 2 minutes.
  • Combine the chicken with the sauce and simmer for 5 minutes until fully cooked.
  • Season with lemon juice and garnish with fresh coriander.
