Steps

  • Heat 100ml of olive oil in a heavy saucepan.
  • Fry chopped onions gently in the oil until soft and translucent.
  • Add the chicken breasts and fry for two minutes.
  • Stir in garlic, ras-el-hanout, saffron, ginger, and pepper and fry until golden.
  • Add the green olives, lemon peel, coriander, and parsley.
  • Pour in enough water to cover the chicken and bring to a boil.
  • Simmer covered on low heat for 35 minutes.
