Steps

  • Preheat the oven to 180°C.
  • Heat oil in a large pan and brown the chicken pieces evenly.
  • Set the chicken aside and fry chorizo until crisp.
  • Sauté onion until soft, then add garlic, peppers, chillies, and paprika for 3 minutes.
  • Return chicken to the pan, add stock, and simmer for 25 minutes.
  • Stir in rice, cover, and bake in the oven for 30 minutes until liquid is absorbed.
  • Add optional seafood during the last 20 minutes if desired.
  • Check that chicken juices run clear and sprinkle with parsley before serving.
