Steps

  • Preheat the oven to 180°C.
  • Melt butter in a saucepan, then whisk in sugar and flour to form a smooth paste.
  • Whisk in the double cream until the mixture is smooth and incorporated.
  • Remove from heat and stir in almonds, mixed peel, ginger, orange zest, and cherries.
  • Place teaspoons of the mixture onto a lined baking tray spaced 3cm apart.
  • Bake for 12 to 15 minutes until golden-brown.
  • Cool on the tray for two minutes before transferring to a wire rack.
  • Melt dark chocolate in a bowl over simmering water.
  • Drizzle the chocolate over the cooled florentines and allow to set.
