Steps

  • Add the butter to a pan of boiling water.
  • Whisk in the flour until the mixture is smooth and pulls away from the pan sides.
  • Cool the mixture for five minutes.
  • Stir in the eggs, cheese, and cayenne pepper sequentially.
  • Heat the vegetable oil in a heavy-bottomed saucepan.
  • Drop oiled teaspoonfuls of the mixture into the hot oil.
  • Fry each portion for five minutes until golden and puffed.
  • Drain the beignets on kitchen paper and season with salt and pepper.
  • Garnish with fresh dill and serve on a clean plate.
