Steps

  • Preheat the oven to 220°C and line a baking tray with parchment.
  • Roll out the pastry on a floured surface and cut into four circles.
  • Prick each pastry circle several times with a fork.
  • Mix the spinach, cheddar, nutmeg, and ratatouille in a bowl.
  • Place two circles on the tray and spoon filling into the centers.
  • Brush edges with water and top with remaining circles to seal.
  • Sprinkle with water and extra cheese, then bake for 12 to 15 minutes.
