Steps

  • Preheat the oven to 200°C.
  • Combine the flour, grated courgette, salt, pepper, and cheddar in a mixing bowl.
  • Mix the milk, egg, and olive oil in a separate bowl and then incorporate into the dry ingredients.
  • Grease ten muffin moulds and fill each halfway with the batter.
  • Prick each cherry tomato and press one into the center of each muffin.
  • Spoon the remaining batter over the tomatoes and bake for 20 minutes until golden.
