Steps

  • Simmer soy sauce, sake, mirin, oyster sauce, and sugar in a small pan to dissolve the sugar.
  • Preheat the oven to 140°C.
  • Place the pork in a roasting tin and pour over the hot liquid.
  • Add leek, garlic, ginger, and 400-500ml of hot water until the pork is partially covered.
  • Cover with a double layer of foil, leaving a small gap for steam.
  • Cook for 2-2.5 hours until tender, turning the pork occasionally.
  • Cool the pork in its liquid before refrigerating in a sealed container for easier carving.
