Steps

  • Preheat the oven to 180°C.
  • Rub the chicken with olive oil and season with salt and pepper.
  • Griddle the chicken for 5 minutes per side in a hot pan.
  • Bake the chicken on a tray for 12 minutes until cooked through.
  • Fry the onion in olive oil for 4 minutes in a saucepan.
  • Add the garlic and fry for one minute.
  • Add the tomatoes and cook for one further minute.
  • Simmer for 5 minutes after adding vinegar, sugar, ketchup, and purée.
  • Stir in most of the basil and adjust seasoning to taste.
  • Serve the chicken topped with the tomato sauce and remaining basil.
