Steps

  • Place the melon pieces into a deep bowl.
  • Crush the melon with your fingers until they release juice but remain chunky.
  • Add the coconut milk and sugar to the bowl and mix well.
  • Stir in the pomegranate seeds and chill in the refrigerator.
  • Place 15ml of crushed ice into the bottom of six serving bowls.
  • Divide the melon mixture between the bowls and garnish with toasted flaked almonds.
