Steps

  • Preheat the oven to 190°C.
  • Boil the cauliflower in salted water for 3 to 5 minutes until almost tender.
  • Drain the cauliflower thoroughly in a colander.
  • Melt butter in a pan and stir in the flour for 1 minute.
  • Gradually whisk in the milk and bring to a boil while stirring.
  • Simmer the sauce for 2 minutes and remove from the heat.
  • Stir in the mustard and two thirds of the cheese.
  • Place cauliflower in a baking dish and cover with the sauce.
  • Top with the remaining cheese and bake for 25 to 30 minutes until golden.
