Steps

  • Heat olive oil and 50g butter in a large saucepan.
  • Add 200g onion, cover, and fry gently for 3 to 4 minutes.
  • Add 700g cauliflower and cook for a further 2 to 3 minutes.
  • Add apples, stock cubes, 750ml milk, and 750ml water.
  • Bring to a boil, then simmer for 5 minutes until cauliflower is tender.
  • Pulse soup in a blender until smooth.
  • Season with salt and black pepper before serving.
