Steps

  • Grate the carrots in a food processor and place them in a large bowl with the spring onions and coriander.
  • Mix in the eggs, flour, parmesan cheese, and cream until well combined.
  • Season to taste with salt and black pepper.
  • Test the mixture consistency by hand and add a little more flour or egg if it does not stick together.
  • Heat the olive oil in a large frying pan over medium heat.
  • Form the mixture into thin fritters and fry for 4 to 6 minutes until golden-brown on both sides.
  • Serve the fritters immediately with an extra garnish of fresh coriander.
