Steps

  • Preheat the oven to 190°C.
  • Soak 120g of bran sticks in 200ml of boiling water until cooled and absorbed.
  • Cream the butter and sugar together in a mixing bowl.
  • Gradually beat the mashed banana and eggs into the butter mixture until smooth.
  • Combine the lemon juice and milk, then slowly beat into the batter.
  • Stir the softened bran mixture into the batter.
  • Sift the flour and baking powder into the bowl and stir to combine.
  • Fold in the salt, dried fruit, and the remaining 120g of dry bran sticks.
  • Divide the batter into a lined 24-hole muffin tin.
  • Bake for 25 to 30 minutes until a skewer comes out clean.
