Steps

  • Heat a griddle pan until very hot.
  • Brush 25g of melted butter over the mango slices and dust with icing sugar.
  • Cook the mango on the griddle for 2 minutes per side until charred.
  • Combine the rice, 200g of coconut milk, and cream in a pan over medium heat.
  • Stir in the honey and heat gently without boiling.
  • Spoon the rice into a bowl and top with the griddled mango.
