Steps

  • Preheat the oven to 200°C.
  • Process all sponge ingredients in a food processor until a thick smooth batter forms.
  • Melt 25g butter and 25g sugar in an ovenproof pan over medium heat until golden-brown.
  • Stir the pear and mixed spice into the caramel.
  • Pour the batter over the pears and bake for 10 minutes.
  • Turn the pudding onto a plate, dust with icing sugar, and drizzle with cream.
