Steps

  • Blend raspberries, sugar, and lemon juice in a food processor to make a purée.
  • Pass the purée through a sieve into a clean bowl to remove seeds.
  • Preheat the grill to maximum heat and line the grill rack with foil.
  • Place halved peaches on the rack with cut sides facing upwards.
  • Sprinkle the peaches generously with caster sugar.
  • Grill the peaches until the sugar is sizzling and turns golden brown.
  • Plate two peach halves with a scoop of ice cream and a drizzle of coulis.
