Steps

  • Preheat the oven to 180°C.
  • Rub half the butter over the bottom of an ovenproof dish.
  • Pack the chicory halves into the dish in a single layer.
  • Drizzle with honey and orange juice, then season with salt and pepper.
  • Dot the remaining butter over the top.
  • Roast for 60 minutes, turning and basting the chicory every 15 minutes.
  • Remove from the oven when the juices form a thick syrup and the chicory is caramelised.
  • Serve warm.
