Steps

  • Mix breadcrumbs, 100g feta, chilli, fresh herbs, and olive oil in a bowl.
  • Fill the calamari tubes two-thirds full and secure the ends with cocktail sticks.
  • Brush the tubes with oil, prick twice, and sear on a hot griddle pan.
  • Fry onions and garlic in a pan before adding canned tomatoes, dried oregano, and sugar.
  • Simmer the sauce until thickened.
  • Spread sauce on a plate, garnish with 100g feta, and top with cooked calamari.
