Steps

  • Preheat the oven to 220°C.
  • Whisk soy sauce, sake, mirin, and sesame oil in a bowl.
  • Mix carrots, spring onions, basil, thyme, and ginger in a separate bowl.
  • Place a portion of the vegetable mix into each banana leaf and top with a piece of brill.
  • Spoon the dressing over the fish and cover with the remaining vegetable mixture.
  • Fold the banana leaf to cover the filling and tie with cook's string to seal.
  • Place parcels on a tray and bake for 10-12 minutes.
  • Serve parcels on plates and open at the table.
