Steps

  • Heat the oil in a pan and fry the onion for 3-4 minutes until softened.
  • Add the spinach, parsley, and 300ml of stock.
  • Bring to the boil, add the bread and lime juice, and simmer for 3-4 minutes.
  • Season with salt and pepper and blend with a stick blender until smooth.
  • Ladle into a bowl and garnish with one tablespoon of yoghurt.
