Method

Preheat the oven to 220°C.

Brown the lamb shanks in a hot casserole dish with oil and set aside.

Sauté the vegetables and rosemary until golden then cook with ras el hanout for 30 seconds.

Pour in the wine and simmer until the liquid reduces by half.

Return the lamb to the dish and submerge in lamb stock.

Cover and braise in the oven for 2.5 hours, adding more stock if needed.

Remove the lamb and reduce the strained stock by half in a pan.

Sauté the diced onion, garlic, and carrot in a pan until softened.

Stir in the lentils and half-cover with stock.

Simmer gently until the lentils reach a saucy consistency.

Season with salt and pepper and mix in the chopped parsley.

Combine shallots and vinegar in a bowl.

Whisk in olive oil, anchovies, and capers, then season.

Toss the mixture with the parsley leaves.

Brown the lamb with a blow torch and serve over the lentils with the salad.
