removed from shells, de-bearded, coral removed, shells cleaned and reserved

Steps

  • Soak vermicelli in just-boiled water for 5-6 minutes until tender.
  • Drain noodles and chop into 10cm lengths.
  • Place cleaned scallops back into their shells.
  • Mix all black bean sauce ingredients together in a bowl.
  • Rub one teaspoon of sauce into each scallop flesh.
  • Wrap vermicelli around each scallop and add one teaspoon of water.
  • Place shells on plates inside a bamboo steamer over boiling water.
  • Steam over high heat for 4-5 minutes until cooked through.
  • Sprinkle with chives or spring onions and serve immediately.
