medium sized, flesh scooped and chopped, fibres removed

Method

Steam chopped pumpkin in a basket over simmering water for 15-20 minutes until tender.

Let pumpkin cool completely.

Blend pumpkin, orange juice, allspice, and honey in a food processor until smooth.

Combine bourbon, cherry liqueur, herb liqueur, and 45ml of purée in a shaker.

Add ice and shake the mixture well.

Strain into a flute glass and garnish with toasted pumpkin seeds and grated nutmeg.
