Steps

  • Combine vinegar, 100ml water, sugar, paprika, mustard, and soy sauce in a saucepan.
  • Bring to a boil, then simmer for 10 minutes until thickened and season.
  • Toss cabbage, carrots, onions, radishes, seeds, lime juice, and herbs in a bowl.
  • Heat a griddle pan over high heat until smoking hot.
  • Fry seasoned chicken skin-side down for 4 minutes.
  • Brush with glaze, flip, and cook for 4 more minutes while glazing occasionally.
  • Rest the chicken for 5 minutes before slicing and serving with the coleslaw.
