Method

Preheat the oven to 200°C.

Drizzle the fish with oil on a baking tray and bake for 4 minutes.

Boil chicken stock with garlic for 5 minutes and then cook the peas in it.

Add 50ml of cream and purée the mixture with a hand-blender.

Melt butter in a pan and simmer with cream, lemon juice, and mustard until reduced by half.

Stir in chives and season with salt and pepper.

Plate the haddock with the peas and drizzle with the butter sauce and chervil.
