Steps

  • Preheat the oven to 200°C.
  • Drizzle the fish with oil on a baking tray and bake for 4 minutes.
  • Boil chicken stock with garlic for 5 minutes and then cook the peas in it.
  • Add 50ml of cream and purée the mixture with a hand-blender.
  • Melt butter in a pan and simmer with cream, lemon juice, and mustard until reduced by half.
  • Stir in chives and season with salt and pepper.
  • Plate the haddock with the peas and drizzle with the butter sauce and chervil.
