Steps

  • Boil the bacon in water, drain, rinse, and pat dry.
  • Sauté bacon and onions in oil until onions brown.
  • Add lentils, carrot, celery, herbs, garlic, and water to the pan.
  • Simmer slowly for 2 hours with a lid on.
  • Remove bacon, herbs, and carrot then strain the lentils.
  • Stir butter into lentils and serve with sliced bacon, parsley, and eggs.
