Steps

  • Blanch the trimmed asparagus in boiling salted water for 3 to 4 minutes.
  • Add the lettuce leaves to the water for the final minute of cooking then drain.
  • Heat 15ml of sesame oil in a frying pan.
  • Fry the prawns for 2 minutes until they turn pink.
  • Arrange the asparagus and lettuce on a serving plate.
  • Place the cooked prawns on top and garnish with chopped chilli.
  • Drizzle the dish with the remaining 15ml of sesame oil and the soy sauce.
