Steps

  • Preheat the oven to 200°C.
  • Flatten the pork tenderloin to a 2cm thickness using a meat mallet.
  • Mix the spices and oil in a bowl, rub over the pork, and season.
  • Griddle the pork in a hot ovenproof pan for 4 minutes per side.
  • Top the pork with breadcrumbs, chopped apple, and cheese, then bake for 5 minutes.
  • Bake the pork fat on a separate sheet for 15 minutes until crisp.
  • Simmer butter, sugar, and apple cubes in a pan for 6 minutes until soft.
  • Serve the crusted pork with the crackling and warm apple sauce.
