Preheat the oven to 200°C.
Rub the butter into the flour and brown sugar until the mixture resembles breadcrumbs.
Bake the crumble mixture on a tray for 6 minutes until lightly golden.
Break the mixture with a fork and bake again until it forms a crunchy biscuit topping.
Melt butter in a pan and infuse with star anise over low heat.
Add apples, sugar, and cinnamon, cooking until apples are soft at the edges.
Discard the star anise and cinnamon stick from the fruit mixture.
Spoon fruit into a buttered dish and top with the pre-baked crumble.
Bake at 200°C for 20 minutes until bubbling.
Serve with crème fraîche and pomegranate seeds.
