Steps

  • Preheat the oven to 200°C.
  • Cook apples, cordial, and sugar in a saucepan for 6 minutes until slightly softened.
  • Blend flour, baking powder, salt, sugar, and butter in a food processor to breadcrumb consistency.
  • Pulse in the buttermilk until a thick batter forms.
  • Place apples in an ovenproof dish and spoon batter dollops on top.
  • Sprinkle cheese over the top and bake for 25 minutes until golden.
  • Heat milk and vanilla in a pan to scalding point, then steep for two minutes.
  • Whisk egg yolks and sugar together in a clean bowl.
  • Whisk hot milk into the egg mixture, then simmer in a pan until thickened and stir in cream.
  • Serve the cobbler in bowls with the custard poured over.
