Preheat the oven to 200°C.
Cook apples, cordial, and sugar in a saucepan for 6 minutes until slightly softened.
Blend flour, baking powder, salt, sugar, and butter in a food processor to breadcrumb consistency.
Pulse in the buttermilk until a thick batter forms.
Place apples in an ovenproof dish and spoon batter dollops on top.
Sprinkle cheese over the top and bake for 25 minutes until golden.
Heat milk and vanilla in a pan to scalding point, then steep for two minutes.
Whisk egg yolks and sugar together in a clean bowl.
Whisk hot milk into the egg mixture, then simmer in a pan until thickened and stir in cream.
Serve the cobbler in bowls with the custard poured over.
