Steps

  • Cook half the apples with cinnamon, mixed spice, and lemon juice for 15 minutes until soft.
  • Roll pastry into a square and cut into four equal quarters.
  • Score a 1cm border on each piece and prick the centers with a knife.
  • Spread the apple purée in the center of each square and top with remaining apple slices.
  • Brush borders with egg and drizzle honey, butter, and sugar over apples.
  • Bake at 190°C for 15 minutes until the tarts are crisp and golden.
