Steps

  • Heat the butter and oil in a deep saucepan until foaming.
  • Stir in the rice until all grains are thoroughly coated.
  • Pour in 750ml of boiling water and stir well.
  • Add the salt and soaked saffron then bring the mixture back to a boil.
  • Stir in the raisins if using.
  • Cover with a tight lid and simmer on very low heat for 20 minutes.
  • Remove from heat and let the rice stand for 5 minutes before serving.
