Steps

  • Pre-heat the oven to 220°C and line a baking tray with parchment paper.
  • Mix both flours, baking powder, salt, cheddar, and 50g of parmesan in a large bowl.
  • Add the milk and combine the ingredients by hand to form a sticky mixture.
  • Fold and knead the mixture on a floured surface into a soft dough.
  • Flatten the dough to 2.5cm thickness and cut 15 rounds using a floured 6cm cutter.
  • Transfer the scones to the tray, brush with beaten egg, and sprinkle with remaining parmesan.
  • Bake for 15-17 minutes until risen and golden-brown.
