Steps

  • Boil potatoes in salted water for 15 minutes until tender.
  • Drain potatoes and allow to cool for 3 minutes.
  • Sauté the shallot in 10ml of olive oil until soft.
  • Add vinegar and simmer until reduced by half.
  • Remove from heat and stir in the remaining olive oil and thyme.
  • Chop potatoes and arrange on a plate.
  • Toss the salad leaves with dressing and drizzle over the potatoes.
