Steps

  • Sauté the onion, chilli, and garlic in oil until softened.
  • Add beans and cook for 10 minutes while stirring occasionally.
  • Add 100ml of vegetable stock and cook until the mixture is smooth.
  • Mash the beans roughly using a fork or potato masher and set aside.
  • Mix tomatoes, red onion, lime juice, and half the coriander to make salsa.
  • Stir the remaining coriander and extra lime juice into the bean mixture.
  • Warm each tortilla in a pan.
  • Divide the bean filling, yoghurt, and salsa among the tortillas and roll.
