Steps

  • Soak three wooden skewers in water for 10 minutes.
  • Mix turkey with paprika, cinnamon, ginger, salt, and pepper in a bowl.
  • Shape the mince into six oval balls and thread two onto each skewer.
  • Brush koftas with olive oil and griddle for 3 minutes per side until cooked through.
  • Melt butter with oil in a pan and sauté onion and garlic until golden.
  • Add the cabbage and apple to the pan and cook for 3 minutes.
  • Stir in the port, sugar, and vinegar.
  • Cover and cook until cabbage is tender, then season with salt and pepper.
  • Serve the koftas on a bed of the glazed cabbage.
