Method

Soak three wooden skewers in water for 10 minutes.

Mix turkey with paprika, cinnamon, ginger, salt, and pepper in a bowl.

Shape the mince into six oval balls and thread two onto each skewer.

Brush koftas with olive oil and griddle for 3 minutes per side until cooked through.

Melt butter with oil in a pan and sauté onion and garlic until golden.

Add the cabbage and apple to the pan and cook for 3 minutes.

Stir in the port, sugar, and vinegar.

Cover and cook until cabbage is tender, then season with salt and pepper.

Serve the koftas on a bed of the glazed cabbage.
