Steps

  • Place the turkey breast between two sheets of cling film and flatten with a rolling pin.
  • Heat 15ml of olive oil in a pan and cook the turkey with sage leaves for 4 minutes per side.
  • Remove the turkey from the pan and set it aside to keep warm.
  • Heat the remaining 15ml of olive oil, lemon juice, tomato, and herbs in the pan until simmering.
  • Season the sauce with salt and black pepper.
