Steps

  • Pre-heat the oven to 220°C.
  • Sift the flour from a height into a large mixing bowl.
  • Make a well in the center of the flour and add the eggs, salt, and pepper.
  • Whisk the eggs while gradually incorporating the flour from the edges.
  • Add the milk and water mixture slowly while continuing to whisk until smooth.
  • Place 30ml of beef fat into the roasting tin and heat in the oven.
  • Move the tin to a medium direct heat on the hob until the fat shimmers.
  • Pour the batter evenly into the tin and bake on a high shelf for 40 minutes.
  • Cut into squares and serve immediately.
