Steps

  • Preheat the oven to 200°C.
  • Butterfly the pork fillet by cutting it lengthwise without slicing all the way through.
  • Shape the black pudding into a cylinder and place it inside the fillet with the sliced apples.
  • Season the meat well, roll the fillet tightly, and secure it with kitchen string.
  • Wrap the pork in cling film and chill in the fridge for two hours.
  • Season the exterior and sear in a pan with butter and olive oil.
  • Roast the pork in the oven for fifteen minutes.
  • Rest the meat before slicing and serving.
