Steps

  • Bring a saucepan of water to the boil.
  • Boil the sweet potato for eight to ten minutes until soft and then drain.
  • Add the baby leeks to the potatoes and mash them together.
  • Heat 15ml of olive oil in a small frying pan.
  • Fry the mixture over a medium heat for five minutes and serve on a plate.
