Steps

  • Preheat the oven to 180°C.
  • Brush the pastry with olive oil and cut it in half.
  • Grease a blini pan and layer the scrunched pastry pieces inside.
  • Sprinkle icing sugar over the pastry and bake for 2 to 4 minutes until golden.
  • Melt butter in a frying pan and sauté apples with caster sugar until caramelised.
  • Place the caramelised apples into the baked tart shell.
  • Whisk the double cream with caster sugar until soft peaks form.
  • Serve the tart topped with whipped cream and a mint sprig.
