Steps

  • Place baby leeks across sole strips, season with salt and pepper, and roll them up.
  • Steam the fish rolls in a steamer over boiling water for 5 to 7 minutes until cooked.
  • Boil new potato halves in a pan until tender then drain.
  • Mash the potatoes with mustard and 100ml of cream until smooth.
  • Serve the steamed sole with mashed potatoes and garnish with chopped dill and parsley.
