Sweet Potato
Method

Place 30ml oil in a hot frying pan and add the steak.

Season the meat and add the halved shallot to the pan.

Cook the steak for three minutes on each side until cooked to your preference.

Remove the steak to rest while continuing to cook the shallots for five minutes until soft.

Peel and cut the sweet potato into thin chips.

Heat 250ml oil in a deep fryer or deep pan.

Fry the potatoes until golden and crisp then drain on kitchen paper.

Serve the rested steak accompanied by the shallots and chips.
