Steps

  • Preheat the oven to 180°C.
  • Soak four wooden skewers in cold water for 15 minutes and drain.
  • Blend lamb, curry powder, chilli, garlic, breadcrumbs, and egg in a food processor.
  • Shape the mixture around the skewers with floured hands and rub with oil.
  • Brown the koftas in a hot griddle pan for 4 minutes.
  • Transfer koftas to the oven and bake for 8 minutes until cooked through.
  • Mix yoghurt, garlic, and mint in a bowl and season with salt and pepper.
  • Sear the lemon cut-side down in a hot pan for 5 minutes until caramelised.
  • Place herb leaves on a plate and drizzle with balsamic vinegar and olive oil.
  • Top herbs with koftas and serve with the tzatziki and caramelised lemon.
