Steps

  • Preheat the oven to 180°C and line a baking sheet with greaseproof paper.
  • Whisk the sunflower oil, lime juice, and caster sugar until the mixture looks pale.
  • Whisk in the garam masala and chilli powder, then season with salt and pepper.
  • Add the nuts and honey to the mixture and stir until evenly coated.
  • Spread the nuts on the baking sheet and roast for 5 minutes.
  • Turn the nuts and roast for a further 8 to 10 minutes until golden and no longer sticky.
  • Allow the nuts to cool on the tray until hardened.
