baby carrots, cut in half lengthways
Method

Heat olive oil in a frying pan.

Season halibut with spices and fry for 3 minutes per side until golden.

Melt butter and oil in a saucepan and soften the onion.

Add carrots and 50ml boiling water, cooking for 2 minutes.

Stir in 75ml cream and simmer until carrots are tender.

Season carrots with herbs, salt, and pepper.

Plate the carrots, top with the halibut, and garnish with chervil.
