Steps

  • Heat olive oil in a frying pan.
  • Season halibut with spices and fry for 3 minutes per side until golden.
  • Melt butter and oil in a saucepan and soften the onion.
  • Add carrots and 50ml boiling water, cooking for 2 minutes.
  • Stir in 75ml cream and simmer until carrots are tender.
  • Season carrots with herbs, salt, and pepper.
  • Plate the carrots, top with the halibut, and garnish with chervil.
