Steps

  • Boil the vegetables in 500ml of water for 10 minutes until soft.
  • Blend the vegetables into a smooth purée and set aside.
  • Brown the beef mince in a non-stick pan over medium heat for 5 minutes.
  • Stir in the puréed vegetables, tomatoes, tomato purée, herbs, stock cube, and bay leaf.
  • Simmer the sauce half-covered for 30 minutes until thickened.
  • Cook the spaghetti in a large pot of boiling salted water until al dente.
  • Serve the Bolognese sauce over the spaghetti and top with Parmesan.
