Steps

  • Dredge the skate wings in the seasoned flour.
  • Heat a large frying pan and fry the skate in foaming butter and oil for 3-4 minutes per side.
  • Melt butter in a small saucepan over medium heat until it turns nut brown.
  • Stir in the lemon juice, caperberries, capers, and parsley to finish the sauce.
  • Boil potato chunks in water for 10-15 minutes until tender and drain.
  • Mash the potatoes until smooth and stir in the 110ml of olive oil and seasoning.
  • Serve the skate with portions of mash and a spoonful of caper butter.
