Steps

  • Preheat the oven to 160°C.
  • Mix the butter and sugar together until pale and smooth.
  • Add the vanilla extract and gently incorporate the flour.
  • Squeeze the mixture into a ball of dough using your hands.
  • Roll the dough out to about 5mm thick on a lightly floured surface.
  • Cut the dough into shapes using a biscuit cutter.
  • Transfer to a lined baking tray and chill in the fridge for 15 minutes.
  • Sprinkle each biscuit with sugar and bake for 15–20 minutes.
  • Transfer the biscuits to a wire rack to cool completely.
